Look A great oyster is plump, glossy, and sitting in plenty of clear liquor. If it looks dry, send it back.
Smell Bring the shell to your nose. It should smell like a fresh sea breeze , clean and briny, never fishy.
Sip Before adding anything, sip a little of the liquor. This is the purest taste of the ocean the oyster grew up in.
Chew This is the step everyone skips. Chew the oyster two or three times. That is when the sweetness, the creaminess, and the minerality come out. Swallowing whole means missing the whole point.
Pair A squeeze of lemon, a drop of mignonette, a sip of crisp white wine or a cold beer. Keep it simple and let the oyster lead.
